Oven temperature 160deg C. 8ozs butter 8ozs brown sugar 1 large egg 7 fluid ozs molasses 10ozs self-raising flour,sieved with 1+1/2 teaspoon baking soda, 1 heaping teaspoon each cinnamon and ground ginger, 1/2 teaspoon each ground nutmeg and salt and 1/4 teaspoon ground cloves. scant 10 fluid ozs boiling water 3-4 pieces stem ginger, chopped 4ozs chopped pecans or walnuts (optional) Melt the butter. Beat in the sugar and the egg. (I use a wooden spoon, not a mixer). Add the molasses. Add the flour sieved with the spices. Beat well. Add the boiling water, the ginger, the nuts. Pour into the tins. It is a very loose batter. 60 - 75 mins baking time. Test for doneness as usual with a skewer. Cool in the tin. Keeps well, freeze/thaw stable. Very good with lemon butter icing or with soured cream. I hope you enjoy it! It doesn't rise much but it is so yummy - let me know what you think when you try it.
